Peppered Halibut Kebabs Recipe

Serves 4 persons.
Preparation Time: 45 min.

Ingredients

Kebabs:
2 pounds halibut or other firm, white fish steaks
3 medium Master's Touch Bell Peppers (Red, Green, Yellow,
and/or Orange)
1/2 large red onion
3 medium Master's Touch Italian or Yellow Squash
10 to 12 bamboo* or metal skewers

Lemon-Herb Marinade:
1 large onion, cut into pieces
1/3 cup lemon juice
1/3 cup olive oil
2 medium cloves garlic
2 small bay leaves
1/2 teaspoon each ground black pepper and salt
1/2 cup parsley sprigs
2 teaspoons dried thyme
1 teaspoon dried rosemary

How to prepare

Blend all marinade ingredients except parsley, thyme, and rosemary in blender of food processor until smooth. Add parsley; blend until chopped. Stir in thyme and rosemary. Divide marinade in half and place in 2 medium bowls (or 2 large plastic bags with zipper locks ). Cut halibut, peppers and red onion into 1-1/2 inch pieces. Cut squash, diagonally, into slices about 1/4 inch thick. Add halibut to one bowl of marinade and vegetables to the other bowl. Cover and refrigerate, turning occasionally, for 3 to 4 hours. Drain fish and vegetables; discard marinade. Alternate pieces of onion, pepper, squash and fish on skewers. Grill or broil, 5 inches from heat source, for 10 to 12 minutes or until fish is cooked through, turning every 4 to 5 minutes. *Soak bamboo skewers in water for 30 minutes before skewering.
